Double Duty Dinners: This Week’s Meal Plan

It’s Meal Plan Monday! This week is all about Double Duty Dinners: pot roast one night, and the next night those leftovers get reimagined into tacos.

Here’s my little secret: it doesn’t feel like leftovers when you turn them into something totally new. You cook once, eat twice, and nobody at the table complains about having “the same thing again.”

I love weeks like this where I get to play in my kitchen, even if it’s just a quick 30-minute meal!

This week at a glance

  • Monday: Zuppa Toscana
  • Tuesday: Mississippi Pot Roast
  • Wednesday: Birria Tacos (made with Tuesday’s pot roast!)
  • Thursday: Korean Beef Bowls
  • Friday: Scallops
  • Saturday: Sausage + Wild Rice Stuffed Squash
  • Sunday: Smash Burgers

The Double Duty Dinner: Pot Roast → Birria Tacos

Tuesday: Mississippi Pot Roast

Tender, savory, and so easy. Make a full roast on Tuesday, and set aside the leftovers (and some of that cooking liquid!) for Wednesday.

Wednesday: Birria Tacos

This is where the magic happens. That leftover pot roast gets shredded, tucked into tortillas, and crisped up into birria-style tacos. Same roast, brand new dinner, and half the work is already done.

The rest of the week

Monday: Zuppa Toscana

A cozy, hearty soup to kick off a chilly fall week.

Thursday: Korean Beef Bowls

A quick, flavor-packed bowl that’s perfect for a busy weeknight.

Friday: Scallops

A little Friday treat! People always ask how we fit scallops into the budget. Honestly, we don’t eat out much, so our grocery bill has a little more wiggle room, especially now that we’re mostly cooking for two. And this batch was a bonus: I got them free as a promo with an order from Wild Alaskan Company.

Saturday: Sausage + Wild Rice Stuffed Squash

Fall in a dish, with a little bit of up north flavor thanks to the wild rice.

Sunday: Smash Burgers

An easy, crowd-pleasing way to wrap up the week.

Cooking for two (and sometimes more)

With both of our girls in college, most nights it’s just the two of us now. I make smaller portions these days, and we don’t mind eating leftovers for lunch. But when one of the girls comes home for a few days, I need more food than usual. That’s why Double Duty Dinners are so handy: they stretch for a crowd, or become tomorrow’s lunch.

Now I want to hear from you: Do you freeze your leftovers? How do you plan meals for two? Tell me in the comments!
