Easy Fall Meal Plan for Busy Weeknights

Wow, is it really the middle of October already? How did that happen? Is anyone else feeling like fall is rushing right by?

When weeks are this busy, I need a meal plan more than ever. Planning ahead means one less decision on a Wednesday night, and let’s face it, nobody needs another decision on a Wednesday.

So this week I kept things manageable. I added some easy favorites like pizza and Italian beef sandwiches for the busiest nights, and a few fun new recipes to try on the days when I can take it a little slower.

This week at a glance

  • Monday: Chicken Normandy
  • Tuesday: Pesto Pasta
  • Wednesday: Moo Shu Chicken
  • Thursday: Pizza
  • Friday: Sushi
  • Saturday: Italian Beefs
  • Sunday: White Chicken Chili

Here’s what’s on the table this week

Chicken Normandy

This one is a little bit fussy, but it’s such a yummy meal and totally worth it on a slower night. I added carrots, leeks, and mushrooms to the chicken before baking, which turns it into a one-pot meal. Fewer dishes? Yes, please.

Moo Shu Chicken (or Pork!)

All the takeout flavor without the drive-thru. This one is packed with veggies and protein, and a bag of broccoli slaw does the chopping for you. It’s ready in about 25 minutes. The original recipe calls for ground pork, but I’m making it with chicken this week. Use whichever you have on hand!

Gluten-free swap: Use gluten-free tortillas (or lettuce cups) and tamari in place of the soy sauce.

Tools I reach for: Rockcrok Everyday Pan, Garlic Press, Mix ‘N Chop

Pressure Cooker White Chicken Chili

Nothing says fall like a big bowl of chili, and this one is on the table in about 30 minutes thanks to the Deluxe Multi Cooker. It’s hearty without being heavy, which makes it perfect for a cozy weeknight or a busy activity night.

Easy swaps: For gluten-free, use a gluten-free flour blend. For dairy-free, skip the cheese and use an unsweetened plain non-dairy milk.

Tools I reach for: Deluxe Multi Cooker, Manual Food Processor, Garlic Press

The easy nights: Pesto Pasta, Pizza, Sushi + Italian Beefs

Some nights just call for the easy stuff, and that’s okay! Pesto pasta on Tuesday, pizza on Thursday, sushi on Friday, and Italian beefs on Saturday keep things simple when the calendar is packed and everyone is running in different directions.
